Our Paperbark Dacquoise marries the classic layered mille-feuille with the rich, syrupy and chewy texture of Mediterranean and Middle Eastern desserts. Inspired by the eucalyptus tree in look and flavour with eucalypt caramel, smoked chocolate ganache, macadamia, white kunzea honey and garnished with a spice mix circle, saltbush seeds, ground wattleseed, honeycomb and a drizzle of white kunzea honey.
