This brain-friendly cake was commissioned by Meals on Wheels to celebrate their 70th birthday and bring awareness to the issue of cognitive decline among senior Australians.
Backed by science, proudly designed by our Masterchef, Christopher Thé. The Unforgettable cake carefully combines a variety of foods that are widely believed to be brain-boosting.
From beetroot and spinach and turmeric, the cake delivers a balanced combination of flavour, texture and nutrition informed by experts in the space of neuroscience, food science and geriatric nutrition.

Strawberry Gum Biscuit base:

Orange and Spinach cake layers:
Plain flour, Eggs, Spinach, Whole oranges, Olive oil, Sour Cream, Refined Sugar, Beetroot powder, Turmeric, Salt.
Turmeric Jelly:
Water, Honey, Pumpkin, Refined Sugar, Turmeric, Geraldton Wax, Agar.
Desert Lime Buttercream:
Plain flour, Butter, Milk, Desert limes, Refined Sugar, Vanilla.
Coconut Yoghurt domes:
Coconut, Coconut Yoghurt, Gelatine, Egg White, White Chocolate, Cocoa Butter, Cinnamon, Colouring.
Fruit Garnish:
Blueberries, Muntries, Finger-limes, Geraldton Wax Leaves, Edible Flowers, Pectin Glaze

Storage instructions: Store in refrigerator below 5c and consume within 2 days, or freeze and consume within 2 months.
Cutting Instructions: Use oiled straight edge knife. Cut down until the base is separated.
